Coconut Curry Fish Parcels w Coconut Rice & Greens

 
 

This has to be one of the tastiest meals! Super easy to prepare, packed with flavour and wholesome goodness!

Makes for 2 people.

 
 
 

Ingredients

 
  • 2 Fresh Limes

  • White fish (I used bass fillets)

  • 3 Fresh Chillis

  • 2 Tbsp Shredded Coconut

  • 1 Can of Coconut Cream (1/2 cup used for rice)

  • 2 Tbsp Tamari (or Soy Sauce)

  • Red Curry Paste

  • 1 Cup Basmati Rice

  • 2 Bunches of Broccolini

  • Handful of Green Beans

 
 
 

Method

 
 

Rice:

Wash 1 cup of rice, rinse until water is clean. Soak rice for 20mins.

Add rice to pot with 1 cup of coconut cream + water.

Bring to boil, stir - then lower heat and cover for 15mins.

Optional: Toast shredded coconut and add to rice.

Fish:

Heat oven to 180C fan forced.

Wash, pat dry fish and place each fish. Tear large square of baking paper off, place one fish within each torn baking paper.

Smear 1 Tbsp of red curry paste over the fish, covering the top. Repeat for the other fillet/s.

Combine, 1 freshly squeeze lime, tamari, finely chopped chilli and coconut into a bowel. Pour this evenly over both fillets. Place a dollop of coconut cream on top of fish. Wrap each parcel up tightly and cook for 15 minutes.

Greens:

Wash and chop greens, steam till desired crunch! Sprinkle salt and drizzle olive oil over the top.

Place in a bowl, coconut rice, greens and fish - making sure to drizzle the remaining coconut curry over the top of the fish.

Severe with a wedge of lemon.
