Ultimate Summer Breakfast: Coconut Chia Pudding

 
 
 
 

This simple breakfast is perfect for summer!! It includes a range of dietary fiber (key for good digestion), healthy fats (good for hormones!) and a range of vitamins and minerals (zinc, magnesium and vitamins A, E - when including topped seeds)!!

Prep this and you will be set for a week!! I even love popping my chia into a jar and prepping the night before so it is ready to go in the morning!

 
 
 

Ingredients:

 
  • 400g tin Coconut Milk

  • 1/3 Cup of Chia Seeds

  • 1 tbsp of pure vanilla extract

  • 1 tsp pure maple syrup

  • 1 tbsp collagen (optional)

    To Top:

  • Greek yogurt

  • Optional: Tbsp of seeds + Nuts (flax seeds, pumpkin seeds, sunflower seeds)

  • Optional: Summer fruit (mango and berries!)

 
 
 

Method:

 

Mix together chia seeds, coconut cream, pure vanilla essence and pure maple syrup (optional to add collagen or probiotics too!)

Store in fridge over night to create pudding!

Top with your choice of yogurt, nuts/ seeds and summer fruits.
